Food Spoilage & Deterioration Task of a Home-made Burger VS a McDonald Burger

This task has been designed for you to monitor and evaluate the spoilage and deterioration of a home-made burger and a fast food burger from McDonald's.
Purpose: To observe the chemical and physical changes in a Home-made burger (demonstration burger) and a bought McDonald's Burger.
Method: You are to conduct a ongoing evaluation of the home-made burger and the McDonald's burger comparing the physical and chemical changes that occur over a 8 week period.

Year 10 Food Technology HAMBURGER Recipe
Serves: 1 Meat Patty: 100g Beef Mince 1/8 Onion, Finely Chopped 1 Tbs Beaten egg 1 Tbs Breadcrumbs 2 tsp of tomato or barbecue sauce Plain flour, to dust patty 2 tsp oil for frypan |
Additional Ingredients: 1 Hamburger Roll, Split 1 Lettuce Leaf, Shredded 1 Large Slice of Tomato 1 Large Slice of Beetroot 1/2 Slice Cheese Tomato or Barbecue Sauce to serve (optional) |
Method:
1. Personal Hygiene (Hands, Hair, Apron, Jewellery)
2. Collect all utensils and ingredients. Turn Grill On.
3. Prepare Salad Ingredients and Preheat frying pan.
4. Combine patty ingredients (as listed above), shape into a flat patty and dust with plain flour. Fry in hot oil, turn once so both sides are golden and the patty is cooked all the way through. Drain excess fat onto paper towel.
5. Toast hamburger bun under hot grill. Top base of bin with meat patty and cheese. Melt cheese under grill.
6. Arrange salad on top of meat and cheese. Add bun top and serve.
